- 3 heads of endive lettuce sliced finely
- 3 tbsp olive oil preferably rich Greek olive oil
- 1 whole lemon juiced
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp dried oregano
- Salt and pepper to taste
- Balsamic glaze for drizzle
Instructions
Preheat the Oven:
- Set your oven to 425°F (220°C) on convection mode for faster cooking.
Prepare the Butternut Squash:
- Cube the butternut squash and place it on a lined baking sheet.
- Drizzle with 1 tbsp olive oil, then season with salt, pepper, paprika, and garlic powder to taste.
